Ingredients
  

For the shrimp

  • 1 pound shrimp, deveined and peeled
  • 1 cup buttermilk marinate shrimp
  • 1 cup flour for breading
  • 1/2 cup corn starch for breading
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying enough to fill the pan

For the sauce

  • 1/2 cup mayonnaise
  • 1 tablespoon sweet chili sauce
  • 1 tablespoon sriracha sauce adjust for heat

For serving

  • Rice or Chinese rice noodles

Instructions
 

Preparation

  • Marinate the shrimp in buttermilk for about 30 minutes.
  • While the shrimp soaks, mix flour, corn starch, paprika, salt, and black pepper in a bowl.
  • Heat vegetable oil in a deep pan over medium-high heat, about 2 inches deep.

Cooking

  • Dredge the marinated shrimp in the flour mixture, shaking off excess flour.
  • Fry the shrimp in small batches for 2-3 minutes on each side until golden and crispy.
  • Strain cooked shrimp on paper towels to remove excess oil.

Making the Sauce

  • In a bowl, mix mayonnaise, sweet chili sauce, and sriracha sauce.

Finishing Touches

  • Toss the fried shrimp in the sauce until evenly coated.
  • Serve over rice or Chinese rice noodles.

Notes

For best results, ensure the oil is hot enough before frying. Store leftovers in an airtight container for up to two days.
