Ingredients
  

For the BBQ Chicken

  • 2-4 pieces chicken breasts Use boneless, skinless chicken breasts.
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 TBSP ranch dressing seasoning
  • 1 TBSP minced garlic Fresh or jarred.
  • 1 TBSP vinegar White or apple cider vinegar recommended.
  • BBQ Sauce (Sweet Baby Ray's recommended) To taste.

For the Roll Ups

  • 4-6 pieces Flour tortillas Size and thickness may vary.
  • 1 cup shredded cheddar or mozzarella cheese Use your preferred cheese.
  • Oil for frying Use enough to cover the bottom of the pan.

Instructions
 

Preparation

  • Spray a crockpot with cooking spray.
  • Add chicken, minced garlic, vinegar, and all the seasonings to the crockpot.
  • Pour enough BBQ sauce on top to cover the chicken, to your liking.
  • Cook on high for 240 minutes or low for 360 minutes.

Assembly and Cooking

  • Once cooked, shred the chicken and stir well, adding more BBQ sauce if needed.
  • Place some of the BBQ chicken and shredded cheese into a flour tortilla and roll up tightly.
  • Heat oil in a pan over medium heat, enough to cover the bottom.
  • Once hot, add the roll-ups to the skillet and cook on both sides until golden brown.
  • Remove from oil and drain on paper towels.
  • Serve with ranch dressing for dipping.

Notes

Make sure to shred the chicken thoroughly so each roll-up gets enough flavor. You can use store-bought BBQ sauce or make your own for an extra personal touch. Customize with your favorite veggies like bell peppers or onions if you like.
