  • Water to cover water to cover the beans Adjust for desired thickness.

  • 1/3 cup light brown sugar Balances savory flavors beautifully.

Instructions
 

Preparation

  • Sort through the dried Northern beans, removing any pebbles or debris, and rinse them under cold water.
  • In a crockpot, add the rinsed beans, diced onion, salt, pepper, and the meaty ham hocks.
  • Pour enough water to cover the beans by about 2 inches.

Cooking

  • Cover the crockpot and cook on high for about 120 minutes to soften the beans.
  • Reduce heat to low and simmer for an additional 4 to 5 hours until beans are tender.
  • Remove the ham hocks from the pot and extract the meat using a fork.
  • Return the meat back into the soup pot.
  • Stir in the brown sugar and adjust the consistency if desired by draining broth.
  • Serve hot and enjoy your hearty soup.

Notes

For special flavor, add herbs like rosemary or thyme. Consider adding a pinch of red pepper flakes for heat. Store leftovers in an airtight container for up to 3 days.
