  • 1 lb Beef stew meat Cut into bite-sized pieces
  • 1 can (15 oz) or 2 cups Corn (canned or fresh) Use fresh corn when in season for best flavor
  • 2 cups Beef broth Homemade or store-bought
  • 1 cup Carrots, chopped Add to the stew for sweetness and texture
  • 1 cup Potatoes, diced Adds heartiness to the stew
  • 1 Onion, chopped Provides foundational flavor
  • 2 cloves Garlic, minced Enhances aroma and taste
  • 2 tbsp Tomato paste Deepens flavor profile
  • 1 tsp Thyme, dried Fresh thyme is an excellent alternative
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Pepper Add more for extra spice
  • 2 tbsp Olive oil For sautéing the aromatics

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onions and minced garlic, sautéing until soft and fragrant.
  • In batches, add the beef stew meat to the pot, browning it on all sides.
  • Stir in the tomato paste and cook for one minute.
  • Pour in the beef broth, stirring well and scraping up any browned bits from the pot.
  • Add the carrots, potatoes, corn, thyme, salt, and pepper.
  • Bring the stew to a rolling boil, then reduce the heat to low.
  • Cover the pot and let it simmer for at least one hour, checking for seasoning before serving.
  • Serve hot with crusty bread or over rice.

Notes

Consider adding Worcestershire sauce or hot sauce for an extra kick. Stew improves in flavor when reheated.
