Ingredients
  

Main Ingredients

  • 1 lb beef use leftover roast beef if available
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 large onion, chopped
  • 1 can diced tomatoes
  • 1 cup corn, canned or frozen
  • 1 cup barley
  • 4 cups beef broth for more flavor, use beef broth instead of water

Seasonings

  • to taste seasonings (salt, pepper, etc.) adjust to your liking; garlic or bay leaves can add depth

Instructions
 

Preparation

  • In a large pot, brown the beef in a little oil.
  • Add chopped onions, carrots, and celery, and sauté until they soften.
  • Stir in tomatoes, corn, and barley.
  • Pour in beef broth and bring to a boil.
  • Reduce heat and let simmer for about 1-2 hours, until the beef is tender.

Serving

  • Serve Beef Barley Soup hot in bowls, optionally accompanied by crusty bread or a side salad.
  • A sprinkle of fresh parsley or grated cheese on top adds an extra touch.

Notes

You can store Beef Barley Soup in an airtight container in the refrigerator for up to three days. For longer storage, it can freeze well for up to three months.
