  • 1 lb Beef stew meat Use bone-in for more flavor.
  • 1 cup Barley Main grain of the soup.
  • 1 medium Onion, chopped
  • 2 Carrots, diced
  • 2 stalks Celery, diced
  • 3 cloves Garlic, minced
  • 8 cups Beef broth
  • 1 can (14.5 oz) Diced tomatoes Add juice.
  • 1 Bay leaf
  • 1 tsp Dried thyme
  • Salt and pepper, to taste
  • 2 tbsp Olive oil
  • Fresh parsley for garnish (optional) Adds color and freshness.

Preparation

  • Brown the beef by cutting into small pieces, then heat olive oil in a large pot over medium heat and add the beef to brown on all sides.
  • Sauté chopped onion, diced carrots, diced celery, and minced garlic for about 5 minutes until soft and fragrant.
  • Add the barley to the pot and stir to coat it with the juices.
  • Pour in the beef broth, stir, and bring to a gentle boil.
  • Add the diced tomatoes along with juice, bay leaf, dried thyme, salt, and pepper.
  • Reduce heat to low, cover the pot, and let it simmer for 1 to 1.5 hours.
  • Remove the bay leaf and taste the soup, adjusting seasonings if necessary.
  • Garnish with fresh parsley before serving.
  • Serve hot and enjoy the comforting flavors.

Notes

Consider adding fresh herbs like rosemary and red pepper flakes for added flavor. Serve with crusty bread or a salad for a complete meal.
