Ingredients
  

Casserole Base

  • 1 lb ground beef Feel free to use lean beef to cut down on fat.
  • 1 can (10 oz) enchilada sauce The star ingredient.
  • 1 can (4 oz) diced green chiles Adds mild heat.
  • 1 onion diced Provides flavor foundation.
  • 1 teaspoon garlic powder Quick flavor boost.
  • 1 teaspoon cumin Adds warmth and smokiness.
  • Salt and pepper to taste salt and pepper Essentials for seasoning.

Layers

  • 8 pieces flour tortillas Helps form the layers.
  • 2 cups shredded Cheddar cheese For melty goodness.
  • 2 cups shredded Monterey Jack cheese Adds creaminess.

Instructions
 

Preparation

  • Preheat the oven to 375°F.
  • In a large skillet, brown the ground beef over medium heat while adding the diced onion.
  • Drain any excess fat from the skillet.
  • Stir in the enchilada sauce and diced green chiles, then season with garlic powder, cumin, salt, and pepper.

Layering and Baking

  • Lay down the first layer of tortillas in a baking dish.
  • Spoon a portion of the beef mixture over the tortillas.
  • Sprinkle shredded Cheddar cheese over the beef layer.
  • Repeat the layering process until all ingredients are used.
  • Cover the baking dish with aluminum foil.
  • Bake for about 25 minutes, then remove the foil and bake for an additional 10-15 minutes until cheese is bubbly and golden.
  • Let cool for a few minutes before serving.

Notes

For additional flavor, consider adding diced jalapeños or red pepper flakes. Serve with chopped cilantro or sour cream on top. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
