  • 1 lb ground beef Use lean beef for a lighter version.
  • 1 can green chilis Chipotle chilis can add a smoky flavor.
  • 2 cups homemade enchilada sauce Store-bought is okay, but homemade adds depth.
  • 8 pieces flour tortillas Corn tortillas can be used for a different flavor.
  • 1 cup Cheddar cheese, shredded Adds creaminess and a golden crust.
  • 1 cup Monterey Jack cheese, shredded Melts beautifully and adds mild flavor.
  • 1 unit onion, chopped Essential for building a flavorful base.
  • 1 teaspoon garlic powder Fresh garlic can be used instead.
  • 1 teaspoon ground cumin Adds an earthy flavor characteristic of Tex-Mex cuisine.
  • to taste salt and pepper Seasoning is key!

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, brown the ground beef with the chopped onion for about 5-7 minutes.
  • Drain any excess fat from the cooked beef.
  • Stir in the garlic powder, ground cumin, salt, and pepper, along with the green chilis.
  • Spread a portion of the enchilada sauce on the bottom of a 9x13 inch baking dish.

Layering

  • Begin layering with 4 flour tortillas, tearing them to fit if necessary.
  • Spread half of your beef mixture over the tortillas.
  • Sprinkle a portion of both Cheddar and Monterey Jack cheeses on top.
  • Repeat the layering with another round of tortillas, the remaining beef mixture, and more cheese.
  • Finish with one last layer of tortillas, the rest of the enchilada sauce, and the remaining cheese.

Baking

  • Cover the dish with foil and bake for 20 minutes.
  • Uncover and bake for an additional 10-15 minutes, until cheese is bubbling and slightly golden.
  • Let it cool for a few minutes before serving.

Notes

Garnish with fresh cilantro before serving for added freshness. Store leftovers in an airtight container in the fridge for up to four days.
