  • 1 lb beef sirloin, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 packet fajita seasoning
  • 1 cup shredded cheddar cheese
  • 1/4 cup salsa
  • 1/4 cup sour cream
  • Tortillas for serving

Cooking

  • Brown the beef in a skillet over medium heat.
  • Add the sliced bell pepper, onion, and fajita seasoning. Cook until the vegetables are tender.
  • Transfer the mixture to a baking dish and top it with shredded cheddar cheese.
  • Bake in a preheated oven at 375°F (190°C) for 10-15 minutes or until the cheese is melted and bubbly.
  • Serve warm with salsa, sour cream, and tortillas.

Notes

For extra flavor, marinate the beef in the fajita seasoning for 30 minutes before cooking. Feel free to add other vegetables like zucchini or mushrooms to the mix. If you like it spicy, add jalapeños or a dash of hot sauce. Leftovers can be stored in an airtight container in the refrigerator for about 3-4 days. To reheat, simply warm in the oven or microwave until heated through.
