  • 1 bay leaf Enhances the stew's flavor.
  • to taste Salt and pepper Essential for flavor.
  • 2 tablespoons olive oil For browning the meat.

Preparation

  • Begin by chopping up your vegetables and cubing the beef.
  • Heat olive oil in a large pot over medium-high heat.
  • Add the beef cubes and let them brown on all sides.
  • Once browned, carefully remove the beef from the pot and set it aside.
  • In the same pot, add the onions and garlic and sauté until fragrant and translucent.
  • Add the carrots and potatoes, stirring to combine.
  • Combine everything by adding the beef back into the pot along with the beef broth, stout beer, tomato paste, thyme, bay leaf, and season with salt and pepper.
  • Allow the mixture to come to a boil.
  • Once boiling, reduce heat to low, cover the pot, and let it simmer for 1.5 to 2 hours.
  • Check for tenderness and adjust seasoning if needed.
  • Ladle the stew into bowls and garnish with fresh parsley if desired.
  • Sit down and enjoy with your family!

Notes

Don't rush the browning process for deep flavors. Adjust seasoning to taste before serving.
