  • 1 lb beef chuck roast Cut into bite-sized pieces
  • 1 cup mushrooms, sliced
  • 1 medium onion, chopped
  • 2 pieces carrots, sliced
  • 8 oz egg noodles Cook according to package instructions
  • 6 cups beef broth
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tsp salt Adjust to taste
  • 1/2 tsp black pepper Adjust to taste
  • 2 tbsp olive oil For sautéing
  • As needed garnish fresh parsley For garnish before serving

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onions, mushrooms, and carrots, sauté until tender, about 5 minutes.
  • Push vegetables to the side and add the minced garlic, cooking for 1 minute.
  • Cut the beef chuck roast into bite-sized pieces and add to the pot. Sear the meat on all sides.

Cooking

  • Pour in the beef broth and soy sauce, bringing the mixture to a boil.
  • Reduce heat and let it simmer for about 1 hour, or until the beef is tender.
  • Stir in the egg noodles and cook according to package instructions.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley before serving.

Notes

Serve hot in bowls, optionally pair with crusty bread or a side salad. For added flavor, consider including herbs like thyme or rosemary while simmering. This soup can be made vegetarian by using vegetable broth and substituting beef with mushrooms or tofu.
