Preparation

  • Preheat your pot with a splash of oil over medium heat.
  • Brown the beef chunks for a few minutes until they have a nice brown crust.
  • Chop the onion, celery, and carrots.
  • Add the chopped vegetables to the browned beef and sauté until the onions become translucent and the carrots start to soften, about 5-7 minutes.
  • Slice the mushrooms and add them to the pot, cooking for another 2-3 minutes until they begin to soften.

Cooking

  • Pour in enough water or beef broth to cover the ingredients.
  • Season with salt, fresh ground black pepper, marjoram, thyme, and rosemary.
  • Bring to a gentle boil, then reduce heat and let it simmer for at least an hour.
  • Check that the beef is fork-tender, then add the egg noodles and cook according to package instructions, about 7-8 minutes.

Serving

  • Taste the soup and adjust seasoning if necessary.

Notes

Allow the soup to simmer low and slow for perfectly tender beef. Leftover wine can add depth to the broth. Store leftovers in an airtight container and reheat gently, adding a splash of water or broth.
