  • 1 lb Beef (chuck or brisket), cut into chunks Use beef with a bit of marbling for better flavor.
  • 1 Onion, sliced
  • 3 cloves Garlic, minced
  • 4 cups Beef broth
  • 2 cups Water
  • 2 Carrots, sliced
  • 2 stalks Celery, sliced
  • 1 teaspoon Ginger, minced
  • 1 tablespoon Soy sauce
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 4 ounces Egg noodles
  • Green onions, chopped, for garnish
  • Cilantro, optional, for garnish Adds brightness to the dish.

Cooking Steps

  • Begin by heating a little oil in a large pot over medium heat. Add the chunks of beef and sear them on all sides for 5-7 minutes. Remove and set aside.
  • In the same pot, add sliced onion, minced garlic, sliced carrots, and celery. Sauté for about 5-7 minutes until tender.
  • Return the seared beef to the pot.
  • Pour in the beef broth and water. Bring to a boil.
  • Add minced ginger, soy sauce, salt, and pepper. Stir and allow to meld.
  • Turn the heat down to low and let it simmer, covered, for about 1.5 to 2 hours.
  • Once the beef is tender, add the egg noodles and cook according to package instructions.
  • Taste the soup and adjust seasonings as needed.
  • Ladle the soup into bowls and garnish with chopped green onions and cilantro if desired.

Let the broth simmer for that cozy aroma. Pairs well with a crusty French loaf for dipping.
