  • 3 pounds Beef short ribs Bone-in short ribs preferred for more flavor.
  • 2 medium Carrots, chopped Adds sweetness.
  • 1 large Onion, chopped Essential for building a savory base.
  • 4 cups Beef broth Can substitute with chicken broth if necessary.
  • 4 cloves Garlic, minced Adds aroma and taste.
  • 1 teaspoon Thyme, dried or fresh Brightens the dish.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • optional Mashed potatoes or egg noodles Perfect for soaking up the juices.

Instructions
 

Preparation

  • Preheat your oven to 300°F (150°C).
  • Season the beef short ribs generously with salt and pepper.
  • In a large dutch oven or heavy pot, heat oil over medium-high heat and sear the ribs on all sides until golden brown.
  • Remove the ribs and set them aside.
  • In the same pot, sauté chopped onions and carrots for about 5-7 minutes until soft.
  • Add minced garlic and cook for another minute.
  • Return the ribs into the pot, pour in the beef broth, and sprinkle thyme on top.
  • Stir gently and bring to a gentle simmer.

Cooking

  • Cover the pot with a lid and bake in the preheated oven for about 2.5 to 3 hours.
  • Remove from the oven and let it rest for a few minutes before serving.
  • Serve with creamy mashed potatoes or egg noodles.

Notes

Use bone-in short ribs for maximum flavor. Allow the dish to rest after cooking for deeper flavors. Leftovers can be stored in an airtight container for up to three days.
