Soup Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 2 carrots, peeled and sliced
  • 1 daikon radish, peeled and sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 6 cups beef broth Homemade broth can be used for added flavor.
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup cilantro, chopped For garnish.

Preparation

  • In a large pot, sauté the chopped onion and minced garlic over medium heat until they are fragrant.
  • Add the beef broth to the pot and bring it to a boil.
  • Add the sliced carrots and daikon radish.
  • Reduce the heat and simmer for 15 minutes, or until the vegetables are tender.
  • Add the sliced beef to the soup and cook until just done, about 2-3 minutes.
  • Season the soup with salt and black pepper.
  • Garnish with chopped cilantro and serve hot.

Notes

Serve the beef soup hot in bowls. You can add crusty bread on the side for a complete meal. For a spicy kick, add chili flakes or hot sauce to each bowl. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Consider adding noodles for a hearty noodle soup variation.
