  • 1 pound beef tips (chuck or sirloin) You want something tender that will soak up all that gravy goodness.
  • 1 cup mushrooms, sliced These add a lovely earthy flavor.
  • 1 medium onion, chopped It brings sweetness and depth.
  • 2 cloves garlic, minced Because garlic makes everything better!
  • 2 cups beef broth The base of our rich gravy.
  • 2 tablespoons olive oil For that perfect sear on your beef.
  • to taste Salt and pepper Always important for seasoning!
  • 2 tablespoons all-purpose flour (optional) If you want a thicker gravy, this will do the trick.
  • to taste Fresh parsley, for garnish (optional) A pop of color and freshness to your finished dish.

Cooking

  • Heat your skillet and pour in the olive oil, setting the heat to medium-high.
  • Add the beef tips to the hot skillet and sear for about 3-4 minutes on each side until nicely browned.
  • Remove the beef from the skillet, keeping the drippings in the pan.
  • In the same skillet, toss in the chopped onion and minced garlic, sautéing until softened (about 3 minutes).
  • Add the sliced mushrooms and sauté until golden and juices are released (about 5 minutes).
  • Return the beef to the skillet and pour in the beef broth.
  • Bring the mixture to a simmer, season with salt and pepper to taste.
  • If desired, mix the flour with a little water until smooth and stir it into the skillet, simmering for another 20-30 minutes until the beef is tender.

Notes

Allow beef tips to come to room temperature before cooking. Don't skip the searing step; it's essential for flavor. Serve with mashed potatoes or rice, and consider using leftovers in an airtight container for up to 3 days.
