Preparation

  • Start by heating a large pot over medium heat. Add a splash of oil and throw in your chunks of chuck roast. Sear the beef until it gets a lovely brown crust.
  • Once your meat is browned, add the chopped onions, celery, and sliced carrots. Stir them together and let them cook for about 5-7 minutes until the onions are soft and translucent.
  • Add the diced potatoes and the can of diced tomatoes (juices and all) to the mixture.
  • Pour in the beef broth and stir everything together.
  • Sprinkle salt and pepper over the soup to enhance the natural flavors.
  • Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for about 1.5 to 2 hours.
  • About 30 minutes before serving, add the trimmed green beans.
  • Taste and adjust the seasoning if necessary.
  • When the soup is ready, ladle it into bowls and serve hot.
