  • 2 medium Potatoes, diced For heartiness.
  • 2 Carrots, sliced Add sweetness.
  • 2 ribs Celery, chopped Adds crunch.
  • 1 Onion, chopped Sauté for flavor.
  • 3 cloves Garlic, minced Enhances flavor.
  • 1 cup Green beans, trimmed and chopped Adds color and freshness.
  • 1 can (14.5 oz) Diced tomatoes Include juice for flavor.
  • 2 Bay leaves Adds depth of flavor.
  • 1 tsp Thyme, dried A staple herb for flavor.
  • Salt and pepper, to taste Adjust according to preference.
  • 2 tbsp Olive oil For sautéing.

Cooking Steps

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent.
  • Add the beef cubes and sear for about 5-7 minutes until browned on all sides.
  • Stir in the minced garlic and let it cook for another minute.
  • Pour in the beef broth and scrape any bits stuck to the bottom of the pot.
  • Add the diced potatoes, sliced carrots, and chopped celery. Stir to blend.
  • Throw in the green beans and diced tomatoes, including the juice.
  • Season with bay leaves, dried thyme, and salt and pepper.
  • Bring to a boil, then lower the heat and let it simmer, covered, for about 45 minutes.
  • Taste and adjust the seasoning if needed.
  • Ladle the soup into bowls and serve warm.
  • Pair with crusty bread or a warm roll.

Notes

This soup can be customized with other vegetables like peas or corn. It also stores well and flavors deepen upon reheating.
