Ingredients
  

For the Soup Base

  • 1 pound Chuck roast A good cut for tenderness
  • 1 Onion, chopped
  • 2 stalks Celery, chopped
  • 2 Carrots, sliced
  • 2 Potatoes, diced
  • 1 can (14.5 oz) Diced tomatoes Including the juice
  • 1 cup Green beans, trimmed
  • 6 cups Beef broth Can substitute with vegetable broth
  • 2 cloves Garlic, minced
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1 tablespoon Olive oil For sautéing
  • Fresh parsley, for garnish Optional

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion, celery, and carrots, and sauté for about 5 minutes until softened.
  • Add the cubed chuck roast and brown on all sides.
  • Stir in minced garlic and cook until fragrant.
  • Add diced potatoes, green beans, and diced tomatoes (juice included).
  • Pour in the beef broth until all ingredients are just covered.
  • Season with Worcestershire sauce, salt, and pepper.
  • Bring everything to a gentle boil.
  • Lower heat, cover, and allow to simmer for 1.5 to 2 hours.
  • Check for tenderness, ensuring beef is falling apart.
  • Ladle soup into bowls and garnish with fresh parsley if desired.

Notes

For best results, use fresh vegetables and allow flavors to meld. Leftover soup tastes even better the next day.
