  • 1 pound ground beef Use lean ground beef for less grease.
  • 1 cup shredded cheddar cheese Cheddar adds a nice flavor, but feel free to use American cheese.
  • 1/2 cup special sauce Mix of mayonnaise, ketchup, mustard, and relish.
  • 1 package refrigerated biscuit dough Can use frozen biscuit dough, thawed.
  • to taste pickles Optional topping for added flavor.
  • to taste salt and pepper Season to enhance flavor.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, cook the ground beef until browned, seasoning with salt and pepper. Drain any excess fat.
  • Stir in the shredded cheese and special sauce until melted and well combined.
  • Roll out the biscuit dough and cut into rounds.
  • Place a spoonful of the beef and cheese mixture on each round, adding a pickle slice if desired.
  • Fold the dough over the filling and seal tightly.
  • Place the bombs on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.

Serving

  • Serve warm and enjoy with extra special sauce on the side for dipping.

Notes

To store leftovers, let the bombs cool completely, then place them in an airtight container and keep them in the refrigerator for up to 3 days. Freeze for up to a month. Reheat in the oven at 350°F (175°C) until warmed through. Tips: Seal the dough well, consider adding diced onions or lettuce, and brush with melted butter for a crispy top.
