Ingredients
  

For the casserole base

  • 1 batch Fluffy biscuits Can be store-bought or homemade.
  • 1 lb Breakfast sausage Preferably pork, but turkey or chicken works as well.
  • 6 large Eggs Whisked together with salt and pepper.
  • 1 cup Colby cheese Shredded.
  • 2 cups White sausage gravy Store-bought or homemade.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, crumble and cook the breakfast sausage until browned and slightly crispy.
  • In a large mixing bowl, whisk together the eggs, seasoning with a pinch of salt and pepper.
  • Combine the cooked sausage with the eggs.
  • Grease a 9×13-inch casserole dish lightly with cooking spray or butter.
  • Slice biscuits into quarters and layer them in the greased dish.
  • Pour the sausage and egg mixture evenly over the biscuit layer.
  • Drizzle the white sausage gravy over the entire casserole, spreading it evenly.
  • Top with shredded Colby cheese.

Baking

  • Bake in the oven for 25-30 minutes, or until the cheese is bubbly and everything is nicely set.
  • Allow to cool for a few minutes before serving.

Notes

For extra flavor, try mixing different types of sausage or adding cooked veggies like bell peppers or spinach. Allow ample cooling time before serving for better texture.
