Ingredients

  • 1 tsp 1 tsp vanilla extract A hint of vanilla takes the flavor over the top.
  • 3 large 3 large eggs To create that perfect, rich, and creamy filling.
  • 1 cup 1 cup cherry pie filling This brings a burst of tartness to complement the chocolate.

For the ganache

  • 2/3 cup 2/3 cup heavy cream We’ll use this to make a heavenly ganache for topping.
  • 6 oz 6 oz semi-sweet chocolate, chopped The key to our chocolaty ganache, providing that rich chocolate experience.

For garnish

  • Fresh raspberries These are for garnish, giving a pop of color and freshness!

Instructions
 

Crust

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the finely crushed Oreos with the melted butter until well combined.
  • Press this mixture firmly into the bottom of a 9-inch springform pan.

Cheesecake

  • In a large mixing bowl, beat the room-temperature cream cheese until it’s smooth and creamy.
  • Gradually add in the granulated sugar while continuing to mix.
  • Blend in the sour cream, cocoa powder, and vanilla extract until well combined.
  • Add the eggs one at a time, mixing well after each addition.
  • Gently fold in the cherry pie filling.
  • Pour this cheesecake filling over the prepared Oreo crust and spread it evenly.
  • Bake for about 50 to 55 minutes.
  • Cool on a wire rack for a bit before moving it to the fridge.

Ganache

  • In a saucepan, heat the heavy cream until it’s just simmering.
  • Pour hot cream over your chopped semi-sweet chocolate in a bowl and let it sit for a minute.
  • Stir until smooth.

Final Touches

  • Once the cheesecake has cooled completely, pour the ganache over the top, letting it drizzle down the sides.
  • Chill the cheesecake in the fridge for at least 4 hours, preferably overnight.
  • Before serving, top your cheesecake with fresh raspberries and chocolate shavings.

Notes

For perfect results, ensure your cream cheese is at room temperature to avoid lumps. Consider making your own cherry topping with fresh or frozen cherries for enhanced flavor.
