Salad Ingredients

  • 5 oz mixed greens or baby spinach
  • 1/2 unit avocado, sliced Use ripe for creaminess.
  • 1 cup blackberries Can use frozen, thawed and drained.
  • 1/4 cup crumbled goat cheese Can substitute with feta cheese.
  • 1/4 cup pecans, toasted Toast in a dry skillet for enhanced flavor.

Vinaigrette Ingredients

  • 2 tablespoons honey Adjust sweetness to taste.
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions
 

Preparation

  • In a large bowl, combine the mixed greens and spinach.
  • Add the sliced avocado, blackberries, goat cheese, and toasted pecans.
  • In a small bowl, whisk together honey, lemon juice, olive oil, salt, and pepper to make the vinaigrette.
  • Drizzle the vinaigrette over the salad and toss gently to combine.
  • Serve immediately.

Notes

Best consumed fresh. Pairs well with grilled chicken or fish. For a filling meal, add quinoa or chickpeas.
