  • 4 slices artisan bread (sourdough or rustic white)
  • 6-8 oz brie cheese, sliced
  • 1/2 cup fresh blackberries Use ripe blackberries for the best flavor.
  • 1 tbsp balsamic glaze Store-bought or homemade.
  • 1 tbsp butter, softened For spreading on the bread.
  • Fresh thyme leaves Optional, for garnish.

Preparation

  • On two slices of bread, layer brie, gently smashed blackberries, and a light drizzle of balsamic glaze. Top with the remaining slices of bread.

Cooking

  • Spread butter on the outsides of each sandwich. Heat a skillet over medium heat.
  • Cook the sandwiches for 3–4 minutes per side until they are golden brown and the brie is melted.

Serving

  • Slice the sandwiches and serve warm, garnished with extra blackberries, thyme, and another drizzle of balsamic glaze.

Notes

If you have leftovers, wrap the sandwiches tightly in plastic wrap or foil and store them in the fridge. They are best eaten within a day or two. Reheat them in a skillet or a toaster oven to maintain their crispy texture. Variations include using goat cheese or mozzarella, or adding crispy bacon for extra flavor.
