Ingredients
  

For the Blackberry Filling

  • 4 cups Fresh blackberries Use ripe blackberries for best flavor.
  • 1 cup Granulated sugar 1/2 cup for the blackberries and 1/2 cup for the batter.
  • 1 tablespoon Lemon juice
  • 1 tablespoon Cornstarch
  • 1 teaspoon Vanilla extract

For the Cobbler Batter

  • 1 cup All-purpose flour
  • 1 tablespoon Baking powder
  • 1/4 teaspoon Salt
  • 1 cup Milk
  • 1/2 cup Butter, melted Don't skip the butter for a rich crust.
  • 1 teaspoon Cinnamon Optional, for topping.

For Serving

  • Ice cream or whipped cream Serve warm for the best experience.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine fresh blackberries, 1/2 cup of sugar, lemon juice, cornstarch, and vanilla extract. Stir until coated and set aside.
  • In another bowl, whisk together flour, baking powder, salt, and the remaining sugar. Add milk and melted butter, mixing until just combined.
  • Grease a 9×13-inch baking dish and pour the batter into it.
  • Gently spoon the blackberry mixture over the batter.
  • Optionally, sprinkle some cinnamon on top.

Baking

  • Bake in the preheated oven for 40-45 minutes or until golden brown and bubbly.
  • Cool for a few minutes before serving.
  • Serve warm with ice cream or whipped cream.

Notes

For perfect results, use ripe blackberries and let the cobbler rest for a few minutes after baking. Can be stored in an airtight container in the fridge.
