  • 4 cups Blackberries Use fresh blackberries, especially when they're in season.
  • 1 cup Sugar

Batter Ingredients

  • 1 cup All-purpose flour
  • 1 cup Milk
  • 1/2 cup Butter, melted Use quality butter for better flavor.
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • Rinse the blackberries under cold water and pat them dry. In a large bowl, combine the blackberries with half a cup of sugar and let them sit.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, mix the milk, melted butter, and vanilla extract.
  • Fold the wet mixture into the dry ingredients until just combined.
  • Grease a 9x13 inch baking dish.
  • Pour the batter into the greased baking dish, then spoon the blackberries and their juices over the batter.

Baking

  • Bake in the preheated oven for about 45-50 minutes, or until golden brown and a toothpick inserted in the center comes out clean.

Serving

  • Allow to cool for about 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Notes

For a twist, add a pinch of cinnamon or nutmeg for extra flavor. Store leftovers in an airtight container in the fridge for up to three days.
