  • 1/2 cup Honey or maple syrup Use maple syrup for a vegan option.
  • 2 cups Oats Old-fashioned oats preferred.
  • 1/2 cup Chocolate chips Dairy-free for vegan option.
  • 1/4 cup Shredded coconut Optional, can be omitted if not preferred.
  • 1/4 cup Chia seeds
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt Balances the flavors.

Preparation

  • Gather all your ingredients to make the process smoother.
  • In a large mixing bowl, combine the almond butter and honey (or maple syrup) and mix until smooth.
  • Fold in the oats and chocolate chips gently.
  • Add in the shredded coconut and chia seeds and mix well.
  • Stir in the vanilla extract and salt until fully combined.
  • Grease an 8x8 inch pan or line it with parchment paper.
  • Pour the mixture into the prepared pan and press it down firmly and evenly.
  • Cover the pan with plastic wrap and refrigerate for at least two hours.
  • After chilling, cut into squares or rectangles.

Notes

Feel free to mix in additional nuts or dried fruits for more variety. Store leftovers in an airtight container in the fridge for up to a week, or freeze them for longer storage.
