  • 4 lbs Beef short ribs Bone-in rib is recommended for better flavor.
  • 2 pieces Carrots, chopped
  • 1 piece Onion, chopped
  • 4 cups Beef broth Use high-quality or homemade for best results.
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 teaspoon Thyme Fresh is preferable for a better flavor.
  • 1 piece Bay leaf
  • To taste Salt and pepper To season beef and vegetables.

Preparation

  • Preheat the oven to 300°F (150°C).
  • Season the beef short ribs generously with salt and pepper.
  • In a large Dutch oven, heat olive oil over medium-high heat.
  • Brown the ribs for about 3-4 minutes on each side.
  • Remove the ribs from the pot and set aside.
  • In the same pot, sauté chopped onions and carrots for about 5 minutes until soft and aromatic.
  • Add minced garlic, thyme, and bay leaf, and stir to combine.
  • Return the browned ribs to the pot.
  • Pour in the beef broth to cover the ribs completely.
  • Bring the mixture to a gentle simmer on the stove.
  • Cover the pot and transfer it to the preheated oven.
  • Cook for about 3 hours, or until the ribs are fork-tender.
  • Carefully remove the pot from the oven and serve hot.

Notes

Serve with creamy mashed potatoes, crusty bread, or a simple green salad. A glass of red wine complements the meal nicely.
