Main Ingredients

  • 400 g bread (half a loaf) Use stale bread for better texture.
  • 600 ml milk Milk helps to soak the bread.
  • 500 g mixed fruit Customize with your favorite fruits.
  • 100 g caster sugar Adjust based on mixed fruit sweetness.
  • 50 g self-raising flour Adds structure to the pudding.
  • 1.5 tablespoons mixed spice Feel free to add spices like cinnamon.
  • 2 large beaten eggs Bind the mixture together.
  • 100 g melted butter Adds richness and flavor.

Instructions
 

Preparation

  • Tear up the bread into a large bowl.
  • Add the milk and leave to soak for 10 minutes.
  • Using a spoon, mush the bread and milk together into a paste-like mixture.
  • Stir in the mixed fruit, caster sugar, self-raising flour, mixed spice, beaten eggs, and melted butter; mix everything together.
  • Pour the mixture into a tray (split into 2 portions if desired) and sprinkle sugar on top.

Cooking

  • Preheat the air fryer to 150°C and cook for 70 minutes.
  • Increase the temperature to 180°C for an additional 8 minutes if browning is needed.

Notes

Serve warm, plain or with ice cream/cream. Sprinkle powdered sugar on top for decoration. Store in an airtight container in the fridge for up to 3 days or freeze for longer storage.
