Ingredients
  

For the Salsa

  • 1 large avocado, peeled, pitted, and diced
  • 1/2 cup diced seeded tomatoes
  • 1 small shallot, minced
  • 1 clove garlic, minced
  • 1 unit jalapeño pepper, seeded and minced
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/4 cup fresh chopped cilantro

For the Burritos

  • 4 large eggs Whisked
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/2 lb spicy sausage (chorizo or Italian) Cooked and browned
  • 1 1/3 cups shredded Monterey Jack cheese
  • 4 10-in burrito-size flour tortillas
  • Vegetable oil For cooking

Instructions
 

Preparation

  • Make the Avocado-Tomato Salsa by mixing the diced avocado, tomatoes, shallot, garlic, jalapeño, lime juice, salt, ground cumin, and cilantro in a medium bowl. Set this aside.
  • In a bowl, whisk together the eggs, smoked paprika, and salt.

Cooking

  • Heat a large nonstick pan over medium-high heat. Cook the sausage until browned, then transfer it to a plate, leaving the drippings in the pan.
  • Reduce the heat and scramble the eggs in the same pan until just cooked. Transfer the eggs to a plate.

Assembling

  • Assemble the burritos by placing some salsa, sausage, eggs, and cheese on each tortilla. Fold the sides and roll up the tortillas tightly.
  • Lightly oil the pan and cook the burritos seam side down until golden brown, then flip and cook the other side.
  • Serve warm.

Make-Ahead

  • For make-ahead burritos, refrigerate the assembled burritos and reheat in foil at 350°F for 15 minutes.

Notes

Use fresh ingredients for the best flavor. Feel free to adjust the spice level by adding more or less jalapeño. You can swap out the Monterey Jack cheese for your favorite cheese. If you prefer vegetarian options, replace the sausage with black beans or sautéed veggies.
