  • 1/2 pound ground breakfast sausage
  • 6 large eggs, beaten
  • 4 slices sourdough bread
  • 4 slices cheese (like cheddar or American) Use your favorite type of cheese for more flavor.
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions
 

Cooking the Sausage and Eggs

  • In a skillet, cook the ground sausage over medium heat until fully browned.
  • In a bowl, beat the eggs and season with salt and pepper.
  • Pour the eggs into the skillet with the sausage and scramble until cooked through.

Making the Sandwich

  • In another skillet, melt 1 tablespoon of butter over medium heat.
  • Place two slices of sourdough bread in the skillet, top each with a slice of cheese, and then layer on the egg and sausage mixture.
  • Add the remaining cheese on top, then top with the other slices of bread.
  • Cook until the bottom is golden brown, then add another tablespoon of butter, flip the sandwiches, and cook until the other side is golden and the cheese is melted.
  • Serve hot and enjoy your breakfast sandwich!

Notes

This breakfast sandwich is perfect on its own, but you can serve it with a side of fresh fruit or a warm cup of coffee. To store leftovers, keep in an airtight container in the refrigerator for up to two days.
