Ingredients
  

For the filling

  • 1 tablespoon vegetable oil
  • 1 small yellow onion, diced
  • 4 large eggs
  • 1 cup cooked bacon, chopped
  • 1 cup shredded cheese (cheddar or your choice)

For the crust

  • 1 package refrigerated pie crusts
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a skillet, heat the vegetable oil over medium heat.
  • Add the onion and sauté until softened.
  • Add the eggs and scramble until cooked through. Season with salt and pepper.
  • Stir in the bacon and cheese until melted.
  • Roll out the pie crusts and cut into rounds.
  • Place a spoonful of the egg mixture on one half of each round, fold over, and seal the edges.
  • Place on a baking sheet and bake for 15-20 minutes until golden brown.

Serving

  • Serve warm on their own or with a side of fresh fruit.
  • Pair with coffee or juice for a complete breakfast.

Notes

To store, let the hand pies cool completely, then place in an airtight container in the refrigerator for up to 3 days. They can also be frozen for longer storage. Brush tops with an egg wash before baking for a golden finish.
