  • 1/4 cup vegetable oil Keeps muffins tender.
  • 2 large eggs Binds ingredients together.

Fillings

  • 1 cup cooked pork sausage, crumbled The star ingredient for savory flavor.
  • 1/2 cup sweet red bell pepper, diced Adds color and sweetness.
  • 1/4 cup green chiles, diced Brings a little heat.
  • 1 cup sharp cheddar cheese, shredded Extra indulgence that enhances flavor.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • Grease a muffin tin or line it with paper liners.
  • In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, and salt.
  • In another bowl, whisk together the milk, vegetable oil, and eggs.
  • Slowly pour the wet ingredients into the dry ingredients, stirring gently until no flour is visible.
  • Fold in the crumbled sausage, diced red bell pepper, green chiles, and shredded cheddar cheese.
  • Spoon the mixture into the muffin tin, filling each cup about 2/3 full.

Baking

  • Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  • Let them cool in the tin for a few minutes before transferring to a wire rack.

Notes

Let wet ingredients come to room temperature for better blending. For a richer flavor, use melted butter instead of oil.
