Ingredients
  

For the Sauce

  • 1/4 cup soy sauce
  • 2 tsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1/2 tsp red pepper flakes
  • 1 tbsp cornstarch

Main Ingredients

  • 1 lb broccoli florets
  • 10 oz sliced mushrooms
  • 2 cloves garlic, minced
  • 2 tbsp cooking oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • Prepare the sauce by whisking together soy sauce, rice vinegar, sesame oil, sugar, red pepper flakes, and cornstarch in a small bowl. Set aside.
  • Blanch the broccoli in boiling water for 30 seconds. Drain and rinse with cold water to stop the cooking process.

Cooking

  • Heat the cooking oil in a large skillet or wok over medium-high heat.
  • Add the sliced mushrooms and cook until they release their moisture and start to brown.
  • Add minced garlic and cook for another 30 seconds.
  • Add the blanched broccoli and stir-fry for 2-3 minutes.
  • Pour the prepared sauce over the vegetables and stir continuously until the sauce thickens.
  • Remove from heat and serve immediately.

Notes

Serve the stir fry hot on its own or over rice or noodles. Sprinkle sesame seeds on top for added crunch. If you have leftovers, allow to cool before storing in an airtight container for up to 3 days. Reheat in a skillet or microwave.
