Ingredients
  

Salad Base

  • 4 cups Broccoli, chopped Make sure to use fresh, crunchy broccoli.
  • 2 Apples, diced Honeycrisp or Granny Smith are recommended.
  • 1/2 cup Dried Cranberries
  • 1/2 cup Sunflower Seeds Add just before serving for best crunch.
  • 1/4 cup Red Onion, chopped Soak in cold water if too strong.

Dressing

  • 1/2 cup Greek Yogurt Can substitute with regular yogurt or sour cream.
  • 3 tablespoons Honey Adjust sweetness to taste.
  • 2 tablespoons Lemon Juice Freshly squeezed is preferred.
  • 1/4 teaspoon Salt

Preparation

  • Wash the broccoli thoroughly under cold running water, then chop it into small, bite-sized pieces.
  • Dice the apples, leaving the skin on for added vitamins.
  • Finely chop the red onion and soak in cold water if too strong.

Mixing

  • In a large salad bowl, mix the broccoli, diced apples, chopped red onion, dried cranberries, and sunflower seeds.
  • In a separate bowl, whisk together the Greek yogurt, honey, lemon juice, and salt to create the dressing.
  • Pour the dressing over the salad mixture and gently fold it in until well coated.

Chilling and Serving

  • Cover and chill the salad in the refrigerator for about 30 minutes before serving.
  • Toss gently before serving in a cheerful bowl.

Notes

Add shredded carrots or bell peppers for additional color. Store leftovers in an airtight container, keeping dressing separate to maintain crispness.
