  • 2 cups Cooked Rice Use white or brown rice, depending on preference.
  • 2 cups Broccoli Florets Steamed or blanched until bright green and slightly crunchy.
  • 1 cup Cheddar Cheese (shredded) Reserve some for topping.
  • 1 can Cream of Mushroom Soup
  • 1/2 cup Milk
  • 1/4 cup Onion (chopped)
  • 1/2 tsp Garlic Powder
  • To taste Salt and Pepper
  • 1/2 cup Breadcrumbs (optional) For topping.

Preparation

  • Preheat your oven to 350°F.
  • Cook your rice until fluffy and tender.
  • Prepare your broccoli by steaming or blanching.
  • In a large mixing bowl, combine cooked rice, broccoli, 3/4 cup shredded cheddar cheese, cream of mushroom soup, milk, chopped onion, garlic powder, salt, and pepper. Stir until well mixed.
  • Transfer the mixture into a greased 9x13 inch baking dish, spreading it evenly.
  • Top with remaining cheddar cheese and optional breadcrumbs.
  • Bake for 25-30 minutes until golden and bubbly.
  • Let cool for a few minutes before serving.

Notes

For enhanced flavor, consider adding fresh herbs like rosemary or thyme. You can substitute broccoli with other vegetables like cauliflower or green beans. Leftovers can be stored in an airtight container and kept in the fridge for up to three days. Reheat in the oven at 350°F for about 15-20 minutes.
