Ingredients
  

For the brownie layer

  • 1 box brownie mix plus ingredients called for on the box

For the cookie dough layer

  • 1 cup butter, softened Make sure the butter is softened to room temperature.
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips You can substitute regular chocolate chips if mini are not available.

For coating

  • 2 cups chocolate chips for coating For a richer taste, consider using dark chocolate.
  • 2 tablespoons vegetable oil

Instructions
 

Preparation of Brownies

  • Prepare the brownie mix according to the package instructions and bake in a 9×13 inch pan. Let cool completely.

Preparation of Cookie Dough

  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until the mixture is light and fluffy.
  • Mix in the milk and vanilla extract until everything is well combined.
  • Gradually add the flour and salt, mixing until just combined.
  • Stir in the mini chocolate chips.
  • Use a small cookie scoop to form the cookie dough into balls and place them on a parchment-lined baking sheet. Freeze for 30 minutes.

Assembly

  • Crumble the cooled brownies into small pieces.
  • Flatten a piece of brownie in your hand, place a cookie dough ball in the center, and wrap the brownie around the dough, pressing to seal. Repeat the process with the remaining brownie pieces and cookie dough balls.

Coating

  • In a microwave-safe bowl, melt the chocolate chips and vegetable oil together, stirring until smooth.
  • Dip each brownie bomb into the melted chocolate, allowing the excess to drip off. Place them back on the parchment-lined baking sheet.
  • Refrigerate until the chocolate is set.

Notes

Brownie Bombs are best served cold. You can present them on a beautiful plate or in a decorative container. Store in an airtight container in the fridge for up to a week, or freeze for longer storage.
