Cooking Steps

  • Season the chicken breasts on all sides with Italian seasoning, salt, and pepper.
  • Warm olive oil in a skillet over medium heat.
  • Pan-sear the chicken in the hot skillet for 6-7 minutes without moving it.
  • Flip the chicken and cook for another 6-7 minutes until cooked through.
  • During the last couple of minutes, sprinkle mozzarella cheese on top and cover to melt.
  • Mix diced tomatoes, chopped basil, and minced garlic in a small bowl.
  • Transfer the chicken to a serving plate and spoon the tomato-basil mixture on top.
  • Drizzle balsamic glaze over the chicken before serving.

Notes

For a crispier skin, leave the chicken undisturbed in the pan for a full 7 minutes. Be generous with the basil and garlic for more flavor!
