Ingredients
  

Chicken Preparation

  • 4 pieces chicken breasts Can substitute with chicken thighs
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons Olive oil for cooking

Toppings

  • 1 cup mozzarella cheese, shredded Use fresh mozzarella for better flavor
  • 2 cups sun-ripened tomatoes, chopped Fresh tomatoes are recommended
  • 1/4 cup fresh basil, chopped Can substitute with oregano or parsley
  • 2 cloves garlic, minced
  • 1/4 cup balsamic glaze Balsamic vinegar can be reduced to create a glaze

Instructions
 

Preparation

  • Season the chicken breasts with Italian seasoning, salt, and pepper.

Cooking

  • In a skillet, heat olive oil over medium heat and pan-sear the chicken for about 6-7 minutes on each side or until fully cooked.

Topping

  • In a bowl, combine chopped tomatoes, basil, and minced garlic.
  • Once the chicken is cooked, place it on a serving plate and top with the tomato mixture.
  • Sprinkle mozzarella cheese on top of the chicken and let it melt.
  • Drizzle the balsamic glaze over the entire dish before serving.

Notes

Pair with a fresh green salad or garlic bread. Store in an airtight container in the refrigerator for up to 3 days.
