Ingredients
  

Main Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 cups fresh tomatoes, diced Use ripe tomatoes for best flavor.
  • 1/4 cup fresh basil, chopped
  • 1/4 cup balsamic glaze Can be substituted with fresh lemon juice if preferred.
  • Salt and pepper to taste
  • Olive oil for grilling Drizzle over chicken before grilling.

Preparation

  • Preheat the grill to medium-high heat.
  • Season the chicken breasts with salt, pepper, and a drizzle of olive oil.

Grilling

  • Grill the chicken for 6-7 minutes on each side or until fully cooked, and the internal temperature reaches 165°F.
  • Once the chicken is cooked, remove it from the grill and let it rest for a couple of minutes.

Assembly

  • In a medium bowl, combine diced tomatoes and chopped basil.
  • Top each chicken breast with the tomato and basil mixture.
  • Drizzle balsamic glaze over the chicken.
  • Serve immediately.

Notes

Bruschetta Chicken is best served warm. Pair it with grilled vegetables or a fresh salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
