Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste Salt and pepper

For the Tomato Mixture

  • 2 cups sun-ripened tomatoes, chopped
  • 1/4 cup fresh basil, chopped For best flavor use fresh basil.
  • 2 cloves garlic, minced
  • 1/4 cup balsamic glaze

Preparation

  • Season chicken breasts with Italian seasoning, salt, and pepper.

Cooking

  • Heat olive oil in a pan over medium heat and pan-sear the chicken until cooked through, about 6-7 minutes per side.
  • In the last minute of cooking, top each chicken breast with mozzarella cheese.

Assembly

  • In a bowl, combine chopped sun-ripened tomatoes, basil, and garlic. Mix well.
  • Once chicken is done, remove from heat and spoon the tomato mixture over the chicken.
  • Drizzle with balsamic glaze and serve.

Notes

Bruschetta Chicken can be served with a side salad or roasted vegetables. Leftovers can be stored in an airtight container in the fridge for about 3-4 days. Ensure to season well for the best flavor and avoid rushing the cooking process to ensure even cooking.
