Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • to taste Salt & pepper

For Toppings

  • 1.5 cups cherry tomatoes, halved
  • 1.5 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • to taste Fresh chopped basil or parsley (for garnish) Optional: balsamic glaze for drizzling

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  • Rub the chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper. Place the chicken in the baking dish.

Topping and Baking

  • Top each piece of chicken with halved cherry tomatoes and mozzarella cheese. Sprinkle with Parmesan cheese.
  • Bake uncovered for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.

Serving

  • Top with fresh herbs like basil or parsley and drizzle with balsamic glaze, if desired.

Notes

Serve hot with garlic bread or a fresh salad. Leftovers can be stored in an airtight container in the fridge for 3-4 days or frozen for up to 2 months.
