Ingredients
  

Main Ingredients

  • 1 cup butter, softened Make sure your butter is softened.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 2 tsp vanilla
  • 2 cups flour Can be substituted with gluten-free flour.
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups chopped pecans To enhance flavor, consider toasting the pecans.

Preparation

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  • Add the eggs and vanilla to the butter mixture; mix until well combined.
  • In another bowl, mix together the flour, baking soda, and salt. Gradually fold this dry mixture into the wet ingredients.
  • Stir in the chopped pecans until evenly distributed in the dough.

Baking

  • Drop tablespoon-sized balls of dough onto the prepared baking sheet. Press a pecan half into the top of each ball.
  • Bake in the preheated oven for 10-12 minutes or until the cookies turn golden brown.
  • Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Cookies can be served warm or at room temperature. Store in an airtight container at room temperature for about a week. For longer storage, freeze cookies with layers of parchment paper in between.
