  • 1 cup Orzo pasta
  • 1 medium Butternut squash, peeled and diced
  • 1 can (15 oz) Black beans, drained and rinsed
  • 1 lb Sausage, sliced (Italian or your choice)
  • 2 cups Spinach (fresh or frozen)
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Vegetable or chicken broth
  • 1 tsp Olive oil
  • Salt and pepper, to taste
  • Grated Parmesan cheese (optional) for serving

Instructions
 

Preparation

  • Preheat the oven to 375°F.
  • In a large pot, heat olive oil over medium heat and sauté the chopped onion and minced garlic until soft and translucent, about 3-5 minutes.
  • Add the sliced sausage and cook until browned.
  • Stir in the diced butternut squash and cook for about 5 minutes.
  • Pour in the vegetable or chicken broth, bring to a boil, then reduce to a simmer.
  • Add the orzo pasta and cook according to package instructions, approximately 8-10 minutes until al dente.
  • When the orzo is nearly done, stir in the drained black beans and spinach until the spinach wilts.
  • Season with salt and pepper to taste.
  • Serve hot, topped with optional grated Parmesan cheese.

Notes

For a creamier texture, stir in a splash of cream or some cream cheese before serving. Leftovers reheat well and might taste even better the next day.
