  • 2 tablespoons butter Unsalted
  • 2 cups milk Can use dairy-free alternatives
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt Regular or sea salt
  • 2 teaspoons vanilla extract
  • 3 large egg yolks

Instructions
 

Preparation

  • In a saucepan, melt the butter over medium heat.
  • Add the brown sugar and stir until it is caramelized.
  • In a bowl, mix the cornstarch, salt, and egg yolks together.
  • Gradually whisk in the milk, and then pour this mixture into the saucepan.
  • Cook over medium heat, stirring constantly until the mixture thickens.
  • Remove from heat and stir in the vanilla extract.
  • Pour the pudding into serving dishes and chill before serving.

Notes

To avoid skin forming on the top, cover with plastic wrap or a lid when storing. Can be served with toppings such as whipped cream, chopped nuts, or sea salt.
