  • 1/2 cup Powdered sugar Used both in the dough and for dusting.

  • 1 1/2 teaspoons Vanilla extract Adds aroma and flavor.
  • 2 1/4 cups Flour Measure properly to avoid dry cookies.
  • 1 cup Pecans, finely chopped Toast for a deeper flavor, if desired.
  • 1 cup Powdered sugar for dusting Used to coat the cookies after baking.

Instructions
 

Preparation

  • Preheat the oven to 350°F.
  • In a stand mixer, cream together the softened butter and powdered sugar until light and fluffy, about 2-3 minutes.
  • Add the salt and vanilla extract to the mixture.
  • Gradually mix in the flour until just combined, then fold in the finely chopped pecans.
  • Roll the dough into balls, about an inch in diameter, and place them on parchment-covered baking sheets.
  • Bake for about 11 minutes, until set but not browned.
  • Allow cookies to cool on sheets for a couple of minutes before transferring them to a cooling rack.
  • While still warm, coat cookies in powdered sugar by shaking them in a bag.
  • Let them cool completely and optionally roll them in powdered sugar again before serving.

Notes

Cookies can be stored in an airtight container at room temperature for about a week, or frozen with layers separated by wax paper.
