  • 1 head Cabbage, chopped
  • 1 lb Ground beef or turkey
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 can (14 oz) Diced tomatoes
  • 4 cups Beef broth
  • 1 cup Rice or quinoa
  • 1 tablespoon Tomato paste
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Preparation

  • Gather all your ingredients and tools.
  • Heat your pot over medium heat, and add the ground beef or turkey. Cook until nicely browned, draining excess fat.
  • Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  • Stir in the chopped cabbage and cook for a couple of minutes.
  • Pour in the diced tomatoes and beef broth, stirring everything together.
  • Add the tomato paste, Italian seasoning, and season with salt and pepper to taste.
  • Stir in your choice of rice or quinoa.
  • Raise the heat and bring the soup to a gentle boil, then reduce to a simmer.
  • Allow the soup to simmer for about 30-40 minutes until the cabbage is tender and the rice or quinoa is cooked.
  • Taste the soup and adjust seasoning as needed.
  • Ladle the soup into bowls and serve warm. Top with freshly chopped herbs or sour cream, if desired.
  • Gather around the table and enjoy!

Notes

For thicker soup, add more rice or quinoa. For an extra kick, add a pinch of red pepper flakes. Leftovers can be refrigerated for up to 3 days and freeze well.
