Ingredients
  

Vegetables

  • 1 medium head Cabbage, chopped
  • 2 large Carrots, sliced
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 2 large Potatoes, diced
  • 1 Bell pepper, chopped

Liquids

  • 4 cups Vegetable or chicken broth Use homemade for best flavor.
  • 1 can (14.5 oz) Diced tomatoes

Seasonings

  • 1 teaspoon Dried thyme Herbs can be customized.
  • Salt and pepper, to taste

Others

  • 2 tablespoons Olive oil For sautéing.
  • Fresh parsley, for garnish (optional)

Instructions
 

Preparation

  • Gather all your ingredients and prepare the vegetables by chopping, slicing, and dicing.
  • Heat 2 tablespoons of olive oil in a large pot over medium heat.

Cooking

  • Add the chopped onion and minced garlic to the pot. Sauté for about 3-4 minutes until fragrant.
  • Add the sliced carrots and chopped bell pepper. Stir and let soften for another 5 minutes.
  • Incorporate the diced potatoes and stir for another minute.
  • Add the chopped cabbage and cook for about 3 minutes until it starts to soften.
  • Pour in 4 cups of vegetable or chicken broth.
  • Stir in the diced tomatoes and dried thyme. Season with salt and pepper.
  • Bring the soup to a boil, then reduce heat to low and let it simmer for 30-40 minutes.
  • After simmering, taste and adjust seasoning if needed.
  • Serve in bowls garnished with fresh parsley if desired.

Notes

This soup is very forgiving. You can add different vegetables or herbs based on your preference. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
