  • 2 pieces Potatoes, diced Any type of potatoes can be used.
  • 1 teaspoon Dried thyme Adjust thyme to taste.
  • Salt and pepper to taste Essential for seasoning.
  • 2 tablespoons Olive oil For sautéing vegetables.
  • Fresh parsley, optional, for garnish Adds a fresh touch when serving.

Cooking Steps

  • Gather all your ingredients on the counter to make the cooking process smoother.
  • Wash and chop your vegetables.
  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped onions and minced garlic, and sauté until the onions become translucent.
  • Add diced carrots and potatoes; stir and cook for about 5 minutes.
  • Add the chopped cabbage to the pot and stir until combined.
  • Pour in the vegetable broth, and stir well.
  • Add the diced tomatoes along with their juices.
  • Sprinkle in dried thyme, salt, and pepper, and adjust according to taste.
  • Bring the soup to a boil, then reduce the heat and let it simmer.
  • Let the soup simmer for about 30 minutes or until all vegetables are tender.
  • Taste the soup and adjust any seasonings if necessary. Serve hot with a garnish of fresh parsley if desired.

Notes

For deeper flavor, use homemade broth and feel free to add other vegetables or beans as per your preference. This soup pairs well with crusty bread or grilled cheese sandwiches.
