Ingredients

  • 1 pound Spicy pork sausage
  • 1 whole Onion (chopped)
  • 4 cloves Garlic cloves (minced)
  • 1 whole Green bell pepper
  • 1 cup Celery
  • 1 head Green cabbage
  • 1 can Diced tomatoes (canned, undrained) 14 ounces
  • 1 cup Chicken broth
  • 1/2 cup Water
  • 1 cup Basmati rice (uncooked)

Seasonings

  • 1 tablespoon Chili powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Paprika
  • 1/2 teaspoon Cumin
  • 1/8 teaspoon Cayenne pepper
  • 1/8 teaspoon Black pepper

Instructions
 

Preparation

  • Wash and chop all vegetables before cooking.

Cooking

  • In a large saucepan, heat over medium heat and add spicy pork sausage, cooking until browned.
  • Toss in chopped onion and minced garlic, stirring for a couple of minutes until tender.
  • Add the green bell pepper and celery, cooking for about three minutes until softened.
  • Add the green cabbage and allow it to wilt.
  • Stir in the canned diced tomatoes (undrained).
  • Add basmati rice, chicken broth, and water, followed by chili powder, salt, paprika, cumin, cayenne pepper, and black pepper.
  • Bring to a gentle boil, then reduce heat to low and cover.
  • Simmer for about 40 to 50 minutes, stirring occasionally.
  • Taste and adjust seasonings as needed before serving.
  • Serve in bowls, optionally topped with fresh herbs or green onion.

Notes

For extra flavor, brown the sausage longer. You can add other vegetables like carrots or peas. For a vegetarian version, omit the sausage and use vegetable broth.
